Here are my current thoughts, but I would like to hear what anyone with more photography experience than me has. In some "How To" book by Kodak, I seem to remember something about photographing stained glass windows. It said to open up three stops over what the normal exposure is. In other words, if you metered the same light source from the outside, then came into the church, just add 3 stops more. That should get you in the ball park.
